In the Caribbean up to not that long ago, all of our cooking was done on wood fires. Outside and to the back of every house were the "coal pots" with their characteristic burnt wood smells. From this, and from the seasonings used, Jerk originated in Jamaica. |

Cooking Instructions |
This pack of jerk seasons 10 lbs. of meat. Use 1 tablespoon of seasoning to 1 lb. of meat. Pierce holes in meat and rub on seasoning. Allow to marinate for 2 - 3 hours. Grill or barbecue on a medium fire until cooked. Dice cut and serve hot |
